I’ve been meaning to update but I’ve honestly been just too tired, which is ironic because this is my last week of work and things have been actually quite slow. I’m planning on spending much more time here on my blog starting next week as well as start working out again… Until then, please bear with me during this transition period.
Justin and I had a date night last Friday at a nearby outdoor mall where I had my very first Tempeh burger… for free, thanks to Veggie Burger. If you have one in your neighborhood, make sure you sign up for their birthday club, they will send you a coupon for a free meal that can be used during the month of your birthday. It’s awesome. I had come across Tempeh at Wholefoods Market before, and always wondered what it would taste like. According to Wikipedia, it is a “traditional soy product originally from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form, similar to a very firm vegetarian burger patty.”
A few weeks ago, I decided to become a part-time vegetarian for various reasons; main reason being that I’ve been having a hard time eating meat lately (I don’t want to get into details because I don’t want to gross you out but I have legitimate reasons) and it isn’t much of a big deal for me because I never really was an avid meat lover anyway. So I’ve been naturally drawn to vegan food, one of which is tempeh. It looks like hard tofu with grains, and tastes like it too. I highly recommend it if you are trying to cut down on meat like me. It may take some time to get used to, but it really isn’t bad, at all. I’ve been also loving almond milk in the morning with Kashi’s Heart to Heart cereal. I just can’t believe all the options that are available these days for those who are vegetarian, lactose-intolerant, or allergic to certain ingredients, which reminds me… it’s time for grocery shopping…

Sorry you haven’t been feeling great. I’ve been vegetarian for almost 20 years. :) Welcome to the club, even if it’a part time.
You have to share recipes! Btw, i’m feeling much better, thank you! :)
